Viking 36-Inch Radiant/Induction Cooktop VCCU1656B

The Viking VCCU1656B 36-inch cooktop offers the best of electric cooking. This versatile model offers two completely different types of elements. The first is a traditional radiant element, while the second is a less common but far superior induction element.

If induction is so superior, why does Viking include radiant elements on the VCCU1656B? The reasoning here is simple. Though induction offers instant heating and cooling times and exquisite temperature control, it requires that you use only compatible cookware. You can check this by seeing if a magnet sticks to your cookware. Most cast-iron and steel cookware will be fine. However, many common nonstick pans have aluminum bottoms, which will not work, as well as glass, copper, etc. For that reason, Viking gives you both cooking options in one appliance. For the most precise control, purchase some compatible pans and create the finest sauces and simmers on the induction elements. For simpler dishes, rely on your favorite but nonmagnetic pans you've loved for years and use the traditional radiant elements. With two induction elements and four radiant elements, you have plenty of options for every dish you choose to create.

The VCCU1656B offers a 6-inch/9-inch dual-radiant element, and for the best results, simply select the size that best matches the diameter of your pan. Viking even includes a bridge that allows you to use two radiant elements together as one. This is a big help when cooking with oversized vessels such as large roasting pans, jumbo Dutch ovens and other cookware with lots of bottom surface area.
