New from J.A. Henckels, the Twin Cuisine line is graceful, yet exacting in its purpose. With elegantly curved handles, these knives feel great in your hand. The full metal tang is one smooth, continuous shape, with no rivets and no gaps, so the knife is extremely comfortable to hold. A two-tone black and silver design is quite striking, with the silver blade showing through the black handle in racing stripe fashion. The blades themselves are precision forged from a single piece of specially formulated high-carbon, no-stain steel, which is then ice-hardened. The process, called Friodur, makes the blade hard as nails for an effective, long-lasting instrument that retains its cutting edge longer and resists corrosion. The 8-piece block set comes with a 4-inch paring/utility knife, 5-inch serrated utility knife, 6-inch sandwich knife, 7-inch Santoku-hollow-edge knife, 8-inch Chef's knife, and 9-inch sharpening steel, as well as a set of kitchen shears and the hardwood block. The hollow-edge knife is an unusual and welcome addition to the set, ideal for cutting meat into small pieces or chopping vegetables.
