Farberware pans have come a long way from the classic roots established over 100 years ago. Now available in more than 15 different lines, Farberware has incorporated many exceptional features into its cookware. The Advantage Hard-Anodized line provides excellent heat conduction through a hard-as-nails cooking surface that won't warp, bend, or buckle. The pans feature a charcoal-gray exterior matte surface with a slightly darker non-stick interior. Coordinating lids feature an inverted design that nests just on top and inside the rim of the pan to lock in moisture, flavor, and nutrients.
The tapered "Windsor-shaped" saucepans and stockpot are designed to facilitate the reduction process, thereby enhancing food flavors naturally. Each pan is complemented by a sturdy brushed stainless-steel handle, which is double riveted to the sides of the pan for permanence. The handles are designed to divert heat back toward the pan so the grip remains relatively cool. The handle end has a 1-inch-long opening suitable for hanging on a pot rack. Ring-style handles on the lids and stockpot are easy to grip, but will become hot with extended cooking.
During tests, the hard-anodized cooking surface heated quickly and required a lower heat setting than usual, delivering a uniform temperature across the cooking surface. The nonstick surface provided excellent release, greatly simplifying cleanup. Note that the uncoated hard-anodized exterior surface is porous and will absorb a food stain that is left in place too long. A paste of baking soda can be used as a non-abrasive scrub. Farberware Hard-Anodized Cookware is suitable for use with most stovetops (except induction) and is oven safe up to 500 degrees Fahrenheit. The 11-piece set comes with 1.5-quart, 2-quart, and 3-quart covered saucepans, 7-quart covered stock pot, 10-inch covered saute pan, and 10-inch open skillet.
