Although Electrolux's EW30GC55 isn't a rangetop model, it offers gas outputs that rival some of these higher priced gas units. With a range so wide that at its maximum it pumps out 18,000 Btu, this cooktop has such a powerful flame that other cooktops can match it. For the searing flames of stir-frying you're not likely to find anything hotter than what this model puts out.
At the opposite end of the spectrum, the EW30GC55 adjusts so low that it holds a solid 450-Btu flame -- perfect for a nice, slow simmer. For just this reason we like this unit for simmering delicate soups and sauces, as well as for the control it provides for melting butter and chocolate.
While this model has an incredible flame, it doesn't have the size or heavy-duty structure of restaurant-style models. Instead it offers a more European, residential design that, although less imposing, does a fine job of preparing meals at home. In fact, this simple, sleek, understated model has so much power it comes close to pumping out too much heat for its size. With four staggered burners in just 30 inches of space, you're not likely to often need all the heat turned on all at once.
The burners are not only staggered for accommodating pans of differing sizes, they also vary in output. Use the larger burners for big pans, pasta pots, woks and high temperature searing. Opt for the smaller burners when preparing petite portions and more delicate, heat-sensitive foods.
Regardless of which pots and pans you choose to use, the surface of this cooktop is stable enough to easily move them around as your meal progresses. A deep well design effectively collects spillovers, and the grates are dishwasher safe. Electrolux tosses in a useful grill/griddle accessory, which adds value to this purchase. An optional wok ring and simmer plate are additional accessories worth considering depending on the way you cook.
We're impressed with the tremendous power of such a small cooktop, love the way it looks in an open kitchen design, but can't help wondering if Electrolux's EW30GC55 might be too hot for some cooks to handle.
