DCS CP-366 gas cooktop

The 36-inch DCS rangetop-style CP-366 pushes maximum gas output to a high of 17,500 Btu. If having the biggest flame matters more to you than anything else, this DCS cooktop is your model.

DCS' cooktop does indeed have a big flame, and although a flame is important to cooking success, this competition to have the highest gas output has gone to such an extreme as to be outright silly. If you're choosing between the highest gas output and other features of interest, we'd like to suggest that any cooktop with 15,000 or more Btu has sufficient power to produce professional-style results. Yes, look for high output, but don't choose the highest output available if you'll be giving up other features you desire. Cooktops pumping out this much fuel will all perform similarly, so a few Btu one way or the other will not make much difference.

What is truly different and noteworthy on the DCS' CP-366 and what makes it a winner with us is the manner in which a low simmer is reached. Engineered differently than the typical gas burner, the primary flame on this model shuts off completely when the cooktop is used for simmering. Only a small retention flame remains on, allowing the burners to hold a simmer beautifully -- at a temperature as low as 140 degrees Fahrenheit. Although power is important, we believe the true test of a cooktop is its ability to perform well with delicate tasks that require a very low heat.

When it comes to styling, we find this model to be particularly appealing, especially to those who want the true look of a commercial cooktop. Unlike some drop-in units, the CP-366 has an authentic overlap design. Everything else on this model speaks well for DCS. Fully sealed burners contain spills and make for easy cleaning. The grates are continuous and make for smooth movement of pots as the meal progresses. Six burners provide plenty of space for creativity, while a standard 36-inch width makes it a snap to add this model to many kitchen designs.

Overall, we find this model to be an authentic commercial-style model that's offered at a very fair price. The DCS CP-366 is a fine cooktop, in spite of the fact that DCS has gotten carried away with overstressing the importance of this model's maximum gas output.
