Cuisinart Espresso Maker EM-100

The Cuisinart Espresso Maker EM-100 is a pump-operated machine that brews rich-tasting espresso with the characteristic layer of foamy crema on top. A 15-BAR pump provides the pressure for excellent flavor extraction. This unit is styled in black and brushed stainless steel for a striking countertop appearance. A boxy design includes an 8-1/5x11-inch platform base with removable rear water tank and a top cup-warming area. A front opening provides space for the cups to sit beneath the brew head and filter holder.

Besides the clear water tank, other removable parts include the Portafilter with its three filter sieves and the pullout front drip tray. You also get a handy stainless-steel frothing pitcher (an unusual but welcome addition), and a plastic measuring scoop that doubles as a tamping tool. We loved the smooth, easy operation of the Cuisinart EM-100. It took a bit longer than some other machines to preheat, but took no time at all to regain the correct temperature between cups. The total preheating time was about two and a half minutes. Each brew cycle is completed in 15 to 30 seconds, depending on whether you want a short or long shot of espresso. The process is controlled manually by turning the function dial to the brew setting to start the pour, and then returning it to the "off" position after enough coffee has been dispensed. We were also impressed at the full layer of crema produced for each cup.

If steam is desired for frothing milk, a separate preheat step adjusts the unit's internal temperature to produce a continuous amount of steam through the commercial-quality steam wand. We noticed that the milk frothed to a fluffy consistency and nearly tripled its volume in just seconds of using the wand. To return to espresso brewing after the steam function has been used, you need to reset the control dials and wait a few seconds while the machine cools itself down by releasing some cool water through the system and into the drip tray.

The controls for this unit are simple and straightforward. There is a power on/off button, a steam/hot water preheat dial and a function dial to select brewing or steaming. A red indicator light glows while the unit is heating and goes out to signal when the correct temperature has been reached. The clear water reservoir holds 53 ounces, or enough for up to 26 single shots of espresso.

The Cuisinart Espresso Maker EM-100 is a superb machine that delivers cafe-quality espresso. We liked everything about this unit -- from its easy operation to its delicious espresso brew.
